The new fishing season is upon us and the early catch is impressive. This beauty approached fifty pounds and was purchased by wine merchant extraordinaire, Guilford Gumbs. A second large Wahoo and three Dolphin fish were procured by Dr. Frankie Hughes and Paradise Cove Resort.

Patrick and whopping Wahoo
|
As many readers and fresh fish buyers know and understand, Patrick uses ancient Japanese catch-and-preserve techniques and delivers a Sashimi-grade fish to his most discerning clients. With this catch, a total of eleven bags of ice were consumed using the Sashimi-grade method, notwithstanding other costly aspects of catching big Wahoo and tuna.
Educated consumers understand that the bigger the fish, the greater the amount of healthy fish oils and fats, thus producing a more delectable flavor. Younger, smaller fish are lean and less delicious, according to the Sashimi grading standards. As such, demands for Patrick’s fish reaches into the fabric of Anguillian society, and include patrons and connoisseurs, like Dame Bernice Lake and many other notables. Of course, Dame Bernice still claims that The Forest shoreline fish are tastier than all others. Unfortunately, plump Wahoo and tuna tend to be found in much deeper waters.
