To assemble our concoctions, Petal Rogers, our resident juice master, and I went into the garden and pulled up this and snipped that. Back in the kitchen with the juicers and blenders rolling, we had some laughs coming up with the names of these drinks. You’ll love to drink them too, and with a juicer they are simple to make. I always tell people to leave their juicer and blender on the counter next to the sink, close at hand. Juicing is like going to the gym; the hardest part of it is getting there.

Citrus Trio

One of my base ingredients that you will see in many of these juices is called Citrus Trio. It is simply a blend of equal parts of freshly squeezed lemon, lime and orange juices.

Vision Finder
Carrot, beets, celery and citrus trio. Great for your eyes, and Bugs Bunny’s favorite!

Yield: 1 large healthy glass

2 medium carrots
1/2 beet
2 celery stalks
splash of Citrus Trio
1 baby carrot with top, washed well, for garnish

Wash the vegetables well. Scrub the carrots, beet and celery with a green scrubby. Run through the juicer and add the citrus trio. Serve on the rocks garnished with a baby carrot sticking out.

Bush Dr. In Da House
Our island “cure-all” with wild spinach, celery, ginger, carrot, beets, local bush herbs and citrus trio.

Yield: 1 large healthy glass

1 cup wild spinach (callaloo)
½ inch ginger
1 medium carrot
1 cucumber
organic herbs
splash of Citrus Trio

Wash the vegetables well. Scrub any of the root vegetables with a green scrubby. Run through the juicer and add the Citrus Trio. Serve on the rocks garnished with a spring of your favorite herb.

Jungle Juice
The island of Anguilla in a glass: pineapple, carrot, Citrus Trio and papaya.

Yield: 1 large healthy glass

1 carrot
1 cup pineapple chunks
1 cup papaya
¼ cup Citrus Trio

Wash the vegetables well. Scrub any of the root vegetables with a green scrubby. Run through the juicer and add the citrus trio. Serve on the rocks garnished with a slice of pineapple.

Feel the Burn
Carrot, ginger, apple and orange. Ginger’s burn is a natural antibiotic. Great for seasickness, it also soothes sore throats.

Yield: 1 large healthy glass

1/2-inch piece of ginger
1 medium carrot
1 red apple
1/2 cup orange juice

Wash the vegetables well. Scrub any of the root vegetables with a green scrubby. Run through the juicer and add the citrus trio. Serve on the rocks garnished with an apple wedge.
Beet Sangría
No one will whine over this one. Fresh beet, carrot, apple and citrus with green grapes and ginger.

Yield: 1 large healthy glass

1 green apple
1/2 cup melon
1 slice ginger
1/4 cup grapes
2 medium carrots
1/2 beet

Wash the vegetables well. Scrub any of the root vegetables with a green scrubby. Run through the juicer. Serve on the rocks garnished with a small bunch of grapes or Champagne grapes if available.


Cucumber Cooler
Be cool as a cucumber with this hydroponic supersonic blend of mint, cucumber and citrus.

Yield: 1 large healthy glass

1 large cucumber
1/2 – 3/4 cup pineapple
handful of mint
splash of Citrus Trio

Wash the vegetables well. Run through the juicer and add the Citrus Yrio. Serve on the rocks garnished with a spring of mint and a pineapple wedge.

This will be my last article in the Anguillian. The last two years have been life changing. Living in another culture has taught me to be more patient and understanding as well as to listen not just to hear. I’ve grown to love my staff and feel like they are more family than folks who work for me.
